The dominant and best variety (alongside rondinella and molinara) used in Valpolicella and Bardolino in north east Italy. It is easy to over crop and produce dull wines, however when yields are kept low it produces fruity, light wines with a curious almond quality and bitter cherry notes. It is at its best when the berries are dried and Recioto or Amarone della Valpolicella are made. These wines are rich and concentrated with wonderful raisined, smoky, spicy flavours and great depth.
