palomino

Palomino is most closely associated with the production of dry sherry in the Jerez region of Spain and is in decline elsewhere except as a table grape. It is typically low in acidity and natural sugars and is relatively neutral in character. However it develops flor extremely well for that distinctive sherry character and is fortified to bring up the alcohol. It is widely planted in South Africa, but mostly used for everyday blends.
